Creamy spinach rice is a rich one-pot dish made with jasmine rice, fresh spinach, cream, and melted cheeses for a comforting and flavorful side.
Ingredients
2 cups jasmine rice
3 tablespoons vegetable oil
3 cups chicken broth
1 cup heavy cream
4 ounces cream cheese, softened
1/4 teaspoon salt
1/4 teaspoon black pepper
8 ounces fresh spinach, roughly chopped
1 cup grated parmesan cheese
1 cup shredded Monterey Jack cheese
Instructions
1. Heat the vegetable oil in a large pot over medium heat. Add the rice and sauté for about 2 minutes, stirring frequently.
2. Pour in the chicken broth and heavy cream. Add the cream cheese, salt, and black pepper. Stir well and bring the mixture to a gentle boil.
3. Reduce the heat and let the rice simmer for about 10 minutes.
4. Stir in the chopped spinach and grated parmesan cheese. Continue simmering for another 10 minutes, stirring occasionally until the rice is tender and creamy.
5. Add the shredded Monterey Jack cheese and stir until fully melted. Serve warm.
