Description

Creamy Tuscan Turkey and Orzo Skillet is a one-pan dinner with tender turkey, orzo pasta, spinach, and sun-dried tomatoes in a rich cream sauce.


Ingredients

2 tablespoons butter

1 large shallot, thinly sliced

4 to 5 garlic cloves, finely chopped

½ cup sun-dried tomatoes, sliced

¼ to ½ teaspoon red chili flakes

1 teaspoon Italian seasoning

½ teaspoon dried oregano

1½ cups heavy cream

1 cup low-sodium chicken broth

½ cup grated Parmesan cheese

6 cups fresh spinach

2 cups cooked boneless turkey, cubed or shredded

1 cup orzo pasta

1 cup water


Instructions

1. Melt butter in a large skillet over medium heat and sauté shallot until soft.

2. Add garlic and cook briefly until fragrant.

3. Stir in sun-dried tomatoes, chili flakes, Italian seasoning, and oregano.

4. Pour in cream and broth and bring to a gentle simmer.

5. Add orzo and water, cover, and cook until tender, stirring occasionally.

6. Stir in Parmesan until melted and creamy.

7. Add spinach and cook until wilted.

8. Fold in turkey, warm through, and adjust consistency with broth.

Notes

Add extra broth as needed to maintain a creamy texture. Adjust seasoning before serving.
