Ingredients

2 small kohlrabi (about 1 pound), peeled and cut into ¼-inch matchsticks

1 large sweet apple (about ½ pound), cored and cut into ¼-inch matchsticks

¼ cup fresh tarragon leaves

3 tablespoons toasted sunflower seeds

Zest of ½ lemon (or more to taste)

1 to 2 tablespoons olive oil, to taste

1 to 2 tablespoons lemon juice, to taste

Instructions

Place the kohlrabi and apple matchsticks in a large bowl.

Add the tarragon leaves and toasted sunflower seeds.

Grate lemon zest generously over the salad mixture.
