Ingredients

  • 2 small kohlrabi (about 1 pound), peeled and cut into ¼-inch matchsticks

  • 1 large sweet apple (about ½ pound), cored and cut into ¼-inch matchsticks

  • ¼ cup fresh tarragon leaves

  • 3 tablespoons toasted sunflower seeds

  • Zest of ½ lemon (or more to taste)

  • 1 to 2 tablespoons olive oil, to taste

  • 1 to 2 tablespoons lemon juice, to taste

  • Sea salt, to taste

  • Freshly ground black pepper, to taste


Instructions

  • Place the kohlrabi and apple matchsticks in a large bowl.

  • Add the tarragon leaves and toasted sunflower seeds.

  • Grate lemon zest generously over the salad mixture.

  • Drizzle with 1 tablespoon of olive oil and 1 tablespoon of lemon juice.
