Description
A bright and refreshing Crispy Apple Kohlrabi Salad made with crisp matchstick vegetables, fresh tarragon, lemon zest, and toasted sunflower seeds. Ready in just 10 minutes, this no-cook healthy salad is perfect as a light side dish.
Ingredients
2 small kohlrabi (about 1 pound), peeled and cut into 1/4-inch matchsticks
1 large crisp apple (about 1/2 pound), cored and cut into 1/4-inch matchsticks
1/3 cup grated Gouda cheese (optional)
1/4 cup fresh tarragon leaves
3 tablespoons toasted sunflower seeds
Zest of 1/2 small lemon (or to taste)
1 to 2 tablespoons olive oil
1 to 2 tablespoons fresh lemon juice
1/4 teaspoon flaky sea salt, or to taste
1/8 teaspoon freshly ground black pepper, or to taste
Instructions
1. Place the kohlrabi and apple matchsticks in a large serving bowl.
2. Add the grated cheese, if using, along with the fresh tarragon and toasted sunflower seeds.
3. Sprinkle the lemon zest evenly over the mixture.
4. Drizzle with 1 tablespoon olive oil and 1 tablespoon lemon juice. Season lightly with salt and black pepper.
5. Gently toss everything together until well combined. If the salad seems dry, add the remaining olive oil and lemon juice as needed.
6. Taste and adjust seasoning with additional salt and pepper if desired. Serve immediately for best texture.
Notes
For a vegan version, omit the Gouda cheese.
Substitute toasted walnuts for sunflower seeds for a richer variation.
