Crispy Parmesan Baked Chicken Milanese and Veggies Made Easy at Home

Description

Golden baked chicken coated in parmesan breadcrumbs with roasted potatoes and green beans, all cooked on one pan.


Ingredients

1 large egg

2 tablespoons lemon juice

2 teaspoons minced garlic

1/2 tablespoon chopped fresh parsley

1/2 teaspoon salt

1/2 teaspoon black pepper

1/2 cup breadcrumbs

1/3 cup grated Parmesan cheese

4 boneless, skinless chicken breasts or thighs

8 to 10 baby potatoes, quartered

1/2 cup melted butter

2 teaspoons minced garlic

Pinch of salt

1 pound green beans, trimmed and cut into thirds


Instructions

1. Preheat oven to 400°F and lightly oil a baking sheet.

2. Whisk egg, lemon juice, garlic, parsley, salt, and pepper.

3. Dip chicken in egg mixture and refrigerate for 30 minutes.

4. Mix breadcrumbs with Parmesan cheese.

5. Coat chicken in breadcrumb mixture.

6. Place chicken and potatoes on baking sheet.

7. Drizzle half the garlic butter over potatoes.

8. Bake for 15 minutes.

9. Flip chicken, add green beans, drizzle remaining butter.

10. Broil for 10 minutes until golden and tender.

Notes

Broiling at the end ensures maximum crispness. Do not overcrowd the pan.
