Description
A comforting slow cooker ramen made with ground beef, vegetables, and savory broth. This easy crockpot dinner creates a rich noodle bowl with minimal effort.
Ingredients
Cooking spray
1 pound lean ground beef
5 green onions, thinly sliced (separate white and green parts)
4 garlic cloves, minced
12 ounces shredded cabbage mix
2 cups shredded carrots
2 cups low-sodium chicken broth
1/3 cup low-sodium soy sauce
1 tablespoon toasted sesame oil
1 tablespoon rice vinegar
2 teaspoons honey
2 teaspoons freshly grated ginger
9 ounces dried ramen noodles (discard seasoning packets)
1 cup frozen shelled edamame
Optional toppings: chopped cilantro, sliced green onions, chili sauce, sesame seeds, crushed red pepper flakes
Instructions
1. Heat a skillet over medium-high heat and lightly coat it with cooking spray. Add the ground beef, the white parts of the green onions, and the minced garlic. Cook for about 6–7 minutes, stirring and breaking the meat apart until fully browned.
2. Transfer the cooked beef mixture to a slow cooker.
3. Add the shredded cabbage mix, carrots, chicken broth, soy sauce, sesame oil, rice vinegar, honey, and grated ginger. Stir everything together.
4. Cover and cook on LOW for about 4 hours or on HIGH for about 2 hours, until the vegetables are tender and the broth is simmering.
5. Stir in the frozen edamame. Place the dried ramen noodles into the slow cooker, pressing them down into the liquid. Spoon some of the mixture over the noodles if needed.
6. Cover again and cook on HIGH for 15–30 minutes, stirring once or twice, until the noodles are soft.
7. Stir in the green parts of the onions and fresh cilantro. Serve hot with optional toppings if desired.
Notes
Discard the ramen seasoning packets since the broth already contains balanced flavor.
For extra heat, add chili sauce or crushed red pepper flakes before serving.
Leftovers can be stored in the refrigerator for up to 3 days.
