Description
A creamy slow cooker chicken dinner made with garlic, parmesan cheese, sun-dried tomatoes, and Italian herbs. This comforting dish delivers rich flavor with minimal effort.
Ingredients
Cooking spray
2 teaspoons olive oil
4 boneless, skinless chicken breasts (about 1 1/4 pounds)
1 1/2 cups low-sodium chicken broth
3 tablespoons cornstarch
4 garlic cloves, finely minced
2 teaspoons Italian seasoning
1 teaspoon paprika
1/2 teaspoon onion powder
1/2 teaspoon salt
1/4 teaspoon black pepper
0.5 cup sun-dried tomatoes, drained and chopped
0.5 cup heavy cream
0.5 cup finely grated Parmesan cheese
Optional for serving: cooked angel hair pasta or shredded cooked spaghetti squash, chopped fresh basil, extra Parmesan cheese
Instructions
1. Heat a large skillet over medium-high heat. Lightly coat with cooking spray and add olive oil.
2. Place chicken breasts in the skillet and sear 2–3 minutes per side until lightly golden.
3. In the slow cooker whisk together chicken broth and cornstarch until smooth.
4. Add garlic, Italian seasoning, paprika, onion powder, salt, and black pepper. Whisk again.
5. Transfer chicken to the slow cooker and turn to coat in the broth mixture.
6. Sprinkle chopped sun-dried tomatoes over the chicken.
7. Cover and cook on low for 3 to 4 hours until chicken is fully cooked and tender.
8. Remove chicken and place on a plate.
9. Stir heavy cream and Parmesan cheese into the sauce until smooth.
10. Return chicken to the slow cooker and coat in the creamy sauce.
11. Serve with pasta or spaghetti squash and garnish with basil and extra Parmesan.
Notes
Searing the chicken before slow cooking enhances flavor.
Freshly grated Parmesan melts more smoothly than pre-shredded cheese.
For a lighter option, serve with spaghetti squash instead of pasta.
