Ingredients

  • For the Salad:

    • 1/2 head red cabbage, thinly sliced (about 4 cups)

    • 1 head romaine or butter lettuce, chopped (about 4 cups)

    • 2 oranges (your choice: navel, mandarin, Cara Cara, or blood orange), peeled and segmented

    • 1 seedless cucumber, halved and sliced (about 2 cups)

    • 2 celery stalks, thinly sliced (about 1/2 cup)

    • 4 large radishes, thinly sliced (about 1/2 cup)

    Optional Add-ins:

    • 1/4 cup crumbled goat cheese or feta

    • 1/4 cup sliced pepperoncini peppers

    • 1/2 cup green or black olives

    • 1/4 cup toasted and chopped nuts (such as pistachios, almonds, or walnuts)

    For the Citrus-Shallot Vinaigrette:

    • 2 tablespoons fresh orange or lemon juice

    • 1/4 cup olive oil

    • 1 small shallot, thinly sliced

    • 1/2 teaspoon salt

    • 1/4 teaspoon ground black pepper

    • 1 tablespoon pepperoncini brine (optional)


Instructions

  • Make the vinaigrette: In a large mixing bowl or measuring cup, whisk together the citrus juice, olive oil, salt, black pepper, and optional pepperoncini brine. Stir in the shallots and set aside to marinate while prepping the salad.

  • Prepare the salad: Add the sliced cabbage, cucumber, celery, radishes, and any desired optional mix-ins like pepperoncini or olives to the bowl with the vinaigrette. Toss well and let it sit for 5 to 10 minutes to absorb the flavors.
