Ingredients

  • For the Dressing:

    • 1/2 cup plain nonfat Greek yogurt

    • 2 teaspoons curry powder

    • 1/2 tablespoon lemon juice

    • 1/2 tablespoon Dijon mustard

    • 1/2 tablespoon honey

    • 1/2 teaspoon salt (adjust if chicken is seasoned)

    • 1/4 teaspoon garlic powder

    • 1/4 teaspoon ground ginger

    • 1/4 teaspoon black pepper

    For the Salad:

    • 2 cups cooked chicken breast, diced or shredded

    • 1 1/2 cups red seedless grapes, halved

    • 1 cup chopped celery

    • 1/2 cup chopped roasted, salted cashews

    • 1/2 Granny Smith apple, diced

    • 1/4 cup sliced green onions

    • 2 tablespoons finely chopped fresh cilantro

    Optional for Serving:
    Toasted bread, tortillas, flatbread, lettuce leaves, avocado halves, or crackers


Instructions

  • In a large mixing bowl, whisk together all dressing ingredients until smooth and creamy.

  • Add the chicken, grapes, celery, apple, green onions, and cilantro. Stir gently to combine.

  • If serving within 30 minutes, mix in the cashews. Otherwise, wait to add them just before serving to maintain their crunch.

  • Taste and adjust seasoning with more curry powder, yogurt, lemon juice, or salt as needed.

  • Serve chilled or at room temperature in your choice of wrap, bread, lettuce cups, or as a dip.
