Ingredients

- 1 tablespoon olive oil
- 1 lb ground beef
- 1/2 yellow onion, chopped
- 1 1/2 tablespoons taco seasoning
- 1 head iceberg lettuce or 6 cups chopped mixed lettuces
- 4 tomatoes, chopped
- 2 avocados, chopped
- 1 can (15 oz) kidney beans, rinsed and drained
- 2 cups shredded cheddar cheese
- 6 cups crunchy corn chips (plain or flavored)
For the dressing:

- 3/4 cup mayonnaise
- 1/4 cup sour cream
- 1 tablespoon sugar
- Juice of 1 lime
- 1 tablespoon taco seasoning
- 1-2 teaspoons hot sauce (optional, to taste)
Instructions
- Heat olive oil in a large skillet over medium heat. Add ground beef and chopped onions. Cook, stirring and breaking up the meat until it’s browned and the onions are tender.
- Stir in taco seasoning and kidney beans. Mix well and let it heat through. If there’s excess fat, carefully drain it.
- In a small bowl, whisk together the mayonnaise, sour cream, lime juice, sugar, taco seasoning, and hot sauce to make the dressing.
- In a large mixing bowl, combine lettuce, tomatoes, avocado, cheese, beef mixture, and chips.
- Add dressing just before serving and toss until evenly coated.
