Ingredients

    • 1 tablespoon olive oil
    • 1 lb ground beef
    • 1/2 yellow onion, chopped
    • 1 1/2 tablespoons taco seasoning
    • 1 head iceberg lettuce or 6 cups chopped mixed lettuces
    • 4 tomatoes, chopped
    • 2 avocados, chopped
    • 1 can (15 oz) kidney beans, rinsed and drained
    • 2 cups shredded cheddar cheese
    • 6 cups crunchy corn chips (plain or flavored)

For the dressing:

    • 3/4 cup mayonnaise
    • 1/4 cup sour cream
    • 1 tablespoon sugar
    • Juice of 1 lime
    • 1 tablespoon taco seasoning
    • 1-2 teaspoons hot sauce (optional, to taste)


Instructions

  • Heat olive oil in a large skillet over medium heat. Add ground beef and chopped onions. Cook, stirring and breaking up the meat until it’s browned and the onions are tender.
  • Stir in taco seasoning and kidney beans. Mix well and let it heat through. If there’s excess fat, carefully drain it.
  • In a small bowl, whisk together the mayonnaise, sour cream, lime juice, sugar, taco seasoning, and hot sauce to make the dressing.
  • In a large mixing bowl, combine lettuce, tomatoes, avocado, cheese, beef mixture, and chips.
  • Add dressing just before serving and toss until evenly coated.
