Ingredients

2½ cups cherry tomatoes, halved

8 oz mini mozzarella balls

1–2 medium avocados, diced

⅓ cup fresh basil, thinly sliced

1 tablespoon olive oil

1 tablespoon homemade balsamic glaze (see below)

Salt, to taste

Ground black pepper, to taste

Combine Ingredients: In a large mixing bowl, add the halved cherry tomatoes, mozzarella balls, diced avocado, and sliced basil.

Dress and Season: Drizzle with olive oil and balsamic glaze. Season with salt and black pepper to your preference.

Toss Gently: Lightly toss the salad until everything is evenly coated. Taste and adjust seasoning if needed.

Serve: Serve immediately, garnished with extra basil if desired. Alternatively, chill for up to 30 minutes before serving.

Homemade Balsamic Glaze:

½ cup balsamic vinegar

1–2 tablespoons maple syrup or brown sugar

Instructions for Glaze:

In a small pot, whisk together the balsamic vinegar and your choice of sweetener.

Bring to a boil over medium-high heat.

Reduce heat to a simmer and cook for 8–10 minutes, stirring occasionally, until the glaze lightly coats the back of a spoon.

Cool completely before using. Store in the refrigerator.
