Description
A quick Tex-Mex taco bowl with seasoned ground beef, rice, fresh toppings, and a creamy salsa ranch sauce.
Ingredients
2 pounds lean ground beef
1/4 cup taco seasoning, plus more to taste
3 tablespoons tomato paste
2/3 cup water
Fine salt, to taste
Black pepper, to taste
1/2 cup salsa
1/4 cup sour cream
1/4 cup ranch dressing
Cooked rice or cauliflower rice
Shredded lettuce
Tortilla chips
Diced tomatoes or halved grape tomatoes
Sliced black olives
Shredded cheddar cheese, shredded Monterey Jack cheese, or crumbled cotija cheese
Diced red onion or quick-pickled red onion
Diced avocado or guacamole
Chopped cilantro
Thinly sliced jalapeño
Lime wedges
Instructions
1. Heat a large skillet over medium-high heat.
2. Add the ground beef and cook for 7 to 9 minutes, breaking it apart with a spoon or spatula, until fully browned and no longer pink. Drain excess fat if needed.
3. Lower the heat to medium. Stir in the taco seasoning, tomato paste, and water. Cook for 2 to 3 minutes, stirring occasionally, until the beef is evenly coated and heated through. Season with salt and black pepper to taste.
4. In a small bowl, mix together the salsa, sour cream, and ranch dressing until smooth.
5. Build each bowl with rice or cauliflower rice, taco beef, and your preferred toppings. Drizzle with the salsa ranch sauce and serve.
Notes
This recipe works well for meal prep. Store cooked beef separately from toppings and sauce. Reheat the beef before assembling the bowls for best texture and flavor.
