Ingredients

2 pounds lean ground beef

1/4 cup taco seasoning

3 tablespoons tomato paste

2/3 cup water

Fine salt, to taste

Black pepper, to taste

1/2 cup salsa

1/4 cup sour cream

1/4 cup ranch-style dressing

Cooked rice or cauliflower rice

Shredded lettuce

Crushed tortilla chips

Diced tomatoes or halved grape tomatoes

Sliced black olives

Shredded cheddar cheese or Monterey Jack cheese

Diced red onions

Diced avocado or guacamole

Fresh chopped cilantro

Thinly sliced jalapeño

Lime wedges


Instructions

1. Place a large skillet over medium-high heat. Add the ground beef and cook for 7 to 9 minutes while breaking it apart until fully browned. Drain excess fat if necessary.

2. Reduce heat to medium. Add taco seasoning, tomato paste, and water. Stir until evenly coated and cook for 2 to 3 minutes until heated through. Season with salt and black pepper.

3. In a small bowl combine salsa, sour cream, and ranch dressing. Mix until smooth and creamy.

4. To assemble, place rice or cauliflower rice into bowls. Top with taco meat and desired toppings such as lettuce, tomatoes, cheese, olives, avocado, or tortilla chips.

5. Drizzle with the creamy salsa ranch dressing and serve immediately.

Notes

Store leftover taco meat and toppings separately in airtight containers in the refrigerator for up to 3 days.

For a low-carb option use cauliflower rice or extra lettuce instead of rice.

Adjust spice level by adding jalapeños or hot salsa.
