Ingredients
12 ounces linguine or spaghetti
4 cups cooked chicken, shredded or diced
2 tablespoons olive oil
1 pound button mushrooms, thickly sliced
1 medium onion, finely chopped
4 cloves garlic, minced
4 tablespoons unsalted butter
1/3 cup all-purpose flour
3 cups low-sodium chicken broth
1 tablespoon lemon juice
2 cups half-and-half
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
1/4 cup fresh parsley, chopped
1 1/2 cups shredded mozzarella cheese
Instructions
1. Preheat the oven to 350°F and grease a 9×13-inch baking dish.
2. Cook pasta until just tender, reserve pasta water, drain.
3. Sauté mushrooms, onion, and garlic in olive oil until softened.
4. Make a roux with butter and flour, then whisk in broth, lemon juice, salt, and pepper.
5. Stir in half-and-half and simmer gently.
6. Combine pasta, chicken, mushroom mixture, parsley, and sauce.
7. Transfer to baking dish, top with mozzarella.
8. Bake covered 20 minutes, uncover and bake 15 minutes more.
Notes
Reserve pasta water allows you to adjust sauce consistency before baking.
