Description

  • Easy Layered Brunch Salad with greens, avocado, blueberries, eggs & yogurt dressing. Bright, healthy, and ready in 22 minutes.

Ingredients

  • For the Croutons:

    • 1 plain bagel, chopped into bite-sized pieces

    • 2 tablespoons olive oil

    For the Salad:

    • 3 cups mixed salad greens

    • 1/2 cup cherry tomatoes, halved

    • 1/2 avocado, diced

    • 1/4 cup fresh blueberries

    • 2 tablespoons chopped walnuts

    • 1 to 2 hard-boiled eggs, peeled and sliced or quartered

    For the Dressing:

    • 4 tablespoons plain Greek yogurt

    • 1 tablespoon olive oil

    • 1 tablespoon everything bagel seasoning

    • 2 tablespoons lemon juice

    • Salt and pepper to taste

    • Water, as needed to thin the dressing


Instructions

  • Preheat your oven to 350°F and line a baking sheet with parchment paper.

  • Toss the bagel pieces with olive oil and spread them out on the baking sheet. Bake for 10–12 minutes or until golden and crisp. Set aside to cool.

  • In a small bowl, whisk together the Greek yogurt, olive oil, bagel seasoning, lemon juice, salt, and pepper. Add a splash of water if needed to reach your desired consistency.

  • In a large bowl or serving platter, layer the mixed greens, cherry tomatoes, avocado, blueberries, walnuts, and sliced hard-boiled eggs.

  • Drizzle the dressing evenly over the salad.

  • Top with the homemade bagel croutons just before serving.
