Ingredients

  • 2/3 cup honey mustard dressing

  • 5 cups mixed salad greens

  • 1/3 cucumber, diced

  • 8 cherry tomatoes, quartered

  • 1 medium carrot, grated

  • 2/3 cup canned sweetcorn, drained

  • 4 radishes, thinly sliced

  • 3 spring onions, sliced

  • 2/3 cup canned chickpeas, drained

  • 8 olives, quartered


Instructions

  • Pour the honey mustard dressing into the bottom of two large 1-quart jars.

  • Layer the salad greens on top of the dressing, followed by the diced cucumber.

  • Add the cherry tomatoes, grated carrot, and sweetcorn.

  • Next, layer in the sliced spring onions and radishes.

  • Add the chickpeas and finish with the olives on top.

  • Pack each layer tightly to keep ingredients from shifting and mixing prematurely.

  • Seal the jars and label them with the date. Store in the fridge until ready to serve.
