This Easy Slow Cooker Apricot Chicken Freezer Meal is a sweet and savory make-ahead dinner that comes together in minutes. Perfect for busy weeknights, it delivers juicy, tender chicken with minimal prep.
Ingredients
2 pounds boneless, skinless chicken breasts
1 cup apricot preserves or jam
1/4 cup French-style salad dressing (without wine or pork derivatives)
2 tablespoons minced garlic
1 teaspoon garlic powder
Instructions
1. In a small mixing bowl, stir together the apricot preserves, salad dressing, minced garlic, and garlic powder until well combined.
2. Place the chicken breasts into a large freezer-safe zip-top bag.
3. Pour the apricot mixture over the chicken in the bag.
4. Press out excess air, seal tightly, and massage the contents to coat the chicken evenly.
5. Label the bag with the recipe name, date, and instructions, then lay flat in the freezer.
6. Thaw the frozen meal in the refrigerator overnight.
7. The next day, empty the contents into a slow cooker.
8. Cover and cook on low for 6–8 hours or on high for 3–4 hours, until the chicken is fully cooked and tender.
9. Serve the chicken as whole breasts or shred and stir it back into the sauce before serving.
Notes
Check the label on your French-style dressing to ensure it’s gluten-free if needed.
For extra tang, add a splash of apple cider vinegar or a pinch of red pepper flakes before freezing.
