Ingredients
1 day-old everything bagel, torn into pieces
1/2 cup panko breadcrumbs
1/2 cup grated Parmesan cheese
1/4 teaspoon crushed red pepper flakes
1/4 cup butter, melted
1 pound chicken tenderloins
1/2 teaspoon salt
Instructions
1. Preheat the oven to 425°F.
2. Add the torn bagel pieces to a food processor and pulse until you get coarse crumbs.
3. Measure out 1/2 cup of the bagel crumbs and place them in a shallow bowl. Stir in the panko, Parmesan, and red pepper flakes. Set aside extra crumbs.
4. Melt the butter in a microwave-safe bowl.
5. Sprinkle the chicken tenderloins with salt.
6. Dip each piece into melted butter, then coat in crumb mixture, pressing lightly.
7. Arrange on a greased rack set inside a baking pan.
8. Bake for 15 to 17 minutes until golden and cooked through.
Notes
Use a slightly stale bagel for best texture.
Do not overcrowd the pan to maintain crispiness.
