- Fresh Mediterranean Greek Salad made with tomatoes, feta, herbs & lemon. A bold, refreshing dish perfect for any season or table.
Ingredients

2 cups cherry tomatoes, halved

1 large cucumber, peeled and diced

1 red bell pepper, chopped

1 small red onion, thinly sliced

½ cup Kalamata olives, pitted and halved

½ cup feta cheese, crumbled

2 tablespoons fresh parsley, chopped

1 tablespoon fresh mint, chopped

3 tablespoons olive oil

1 tablespoon lemon juice (as substitute for red wine vinegar)

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste
Instructions

Rinse all vegetables thoroughly under cold water.

Slice the cherry tomatoes in half, peel and dice the cucumber, chop the red bell pepper, and thinly slice the red onion.

In a large salad bowl, combine tomatoes, cucumber, bell pepper, onion, and olives.

Add crumbled feta cheese, chopped parsley, and mint.

In a separate small bowl, whisk together olive oil, lemon juice, dried oregano, salt, and pepper until well combined.

Pour the dressing over the salad and toss gently to coat everything evenly.
