Ingredients

  • For the Salad:

    • 4 cups baby spinach or mixed greens

    • 3 ripe peaches, sliced or diced

    • 4 oz mozzarella pearls

    • ⅓ cup fresh basil, thinly sliced

    • Salt and pepper, to taste

    • ½ cup roasted chickpeas or crispy turkey bacon as a crispy topping substitute

    For the Creamy Balsamic Vinaigrette:

    • 2 tablespoons olive oil

    • 2 tablespoons balsamic vinegar

    • 2 tablespoons plain Greek yogurt

    • 2 tablespoons maple syrup


Instructions

  • Make the Vinaigrette:
    In a small bowl, whisk together the olive oil, balsamic vinegar, Greek yogurt, and maple syrup until smooth. Refrigerate until ready to use.

  • Prepare the Crispy Topping:
