Description
A quick skillet meal with tender chicken bites cooked in garlic butter and tossed with fresh zucchini noodles.
Ingredients
4 boneless, skinless chicken breasts, cut into bite-sized pieces
2 tablespoons olive oil, divided
2 teaspoons Italian seasoning
1 teaspoon garlic powder
1 teaspoon salt
½ teaspoon freshly ground black pepper
4 tablespoons butter, divided
6 medium zucchinis, spiralized
6 cloves garlic, minced
2 tablespoons fresh parsley, finely chopped
2 tablespoons low-sodium chicken broth
½ cup shredded parmesan cheese (optional)
1 lemon, cut into wedges
Instructions
1. Season chicken with olive oil, Italian seasoning, garlic powder, salt, and pepper.
2. Heat skillet and cook chicken in batches until golden and cooked through.
3. Remove chicken and melt butter in skillet, then add garlic, parsley, and broth.
4. Add zucchini noodles and toss gently for 2 minutes.
5. Return chicken to skillet, mix well, and heat through.
6. Serve with parmesan and lemon wedges.
Notes
Do not overcook zucchini noodles to avoid excess moisture. Adjust lemon to taste.
