Description
Garlic Butter Cod is a quick baked seafood dinner featuring tender cod fillets coated in a rich garlic butter sauce with lemon and fresh parsley.
Ingredients
4 tablespoons unsalted butter, softened
2 tablespoons olive oil
4 garlic cloves, finely minced
1/4 teaspoon paprika
1/4 teaspoon salt
2 tablespoons finely chopped fresh parsley
1 pound cod fillets (four 4-ounce pieces)
1 fresh lemon
Instructions
1. Preheat the oven to 400°F.
2. In a small bowl, mix the softened butter, olive oil, minced garlic, paprika, salt, and chopped parsley until smooth and well combined.
3. Arrange the cod fillets in a baking dish in a single layer. Spread the garlic butter mixture evenly over the top of each fillet.
4. Slice half of the lemon into thin rounds and place them over the fish. Cut the remaining half into wedges for serving.
5. Bake for 15 to 20 minutes, or until the fish flakes easily with a fork and reaches an internal temperature of 145°F.
6. Spoon the pan juices over the fish before serving and serve with fresh lemon wedges.
Notes
Use fresh cod fillets of similar thickness for even cooking.
Frozen cod can be used if fully thawed and patted dry.
Serve with vegetables, rice, or roasted potatoes for a complete meal.
