Ingredients
1 tablespoon unsalted butter
1 pound boneless, skinless chicken thighs, cut into bite-size pieces
1 teaspoon salt
1/2 teaspoon ground black pepper
1 teaspoon paprika
3 garlic cloves, minced
1 cup long-grain white rice, uncooked
2 cups low-sodium chicken broth
1/2 teaspoon dried thyme
1/2 teaspoon dried parsley
1/2 cup freshly grated Parmesan cheese
1 tablespoon chopped fresh parsley (for garnish)
Instructions
1. Place a large skillet over medium heat and melt the butter.
2. Season the chicken pieces with salt, black pepper, and paprika. Add them to the skillet and cook for about 5 minutes, stirring occasionally, until lightly browned.
3. Add the minced garlic and cook for about 30 seconds, just until fragrant.
4. Stir in the uncooked rice, chicken broth, dried thyme, and dried parsley. Mix well and bring the mixture to a gentle simmer.
5. Cover the skillet with a lid, reduce the heat to low, and cook for about 20 minutes, or until the rice is tender and the liquid is absorbed. Avoid stirring while it cooks.
6. Remove from heat and stir in the grated Parmesan cheese.
7. Sprinkle with fresh parsley before serving.
Notes
For extra creaminess, stir in a splash of heavy cream at the end of cooking.
Store leftovers in an airtight container in the refrigerator for up to 3 days.
