Ingredients
1/4 cup olive oil
1/4 cup fresh lemon juice
3 cloves garlic, minced
1/2 tablespoon dried oregano
1/2 teaspoon salt
Freshly ground black pepper, to taste
1.5 pounds boneless, skinless chicken thighs or breasts
Instructions
1. In a medium bowl or a large resealable bag, combine olive oil, lemon juice, garlic, oregano, salt, and pepper. Mix well.
2. If using chicken breasts, slice each in half horizontally to create thinner fillets.
3. Add the chicken to the bowl or bag, ensuring each piece is coated evenly in the marinade.
4. Cover and marinate in the refrigerator for at least 30 minutes and up to 8 hours, turning occasionally for even flavoring.
5. When ready to cook, preheat a large skillet over medium heat.
6. Remove chicken from the marinade and place into the hot skillet. Discard remaining marinade.
7. Cook chicken for 5–7 minutes on each side, or until golden brown and fully cooked through. Cook in batches if needed to avoid overcrowding.
8. Transfer cooked chicken to a cutting board and let rest for 5 minutes before slicing.
Notes
For extra flavor, garnish the pasta bowl with additional parmesan and a squeeze of lemon before serving. Massage kale with olive oil and salt before mixing into pasta for a softer texture. Store in airtight containers for up to 4 days.
