Greek Meatball Soup with Lemon and Rice

Description

A traditional Greek soup with tender meatballs, rice, and a silky egg-lemon sauce.


Ingredients

1 pound ground beef or turkey

1/3 cup uncooked rice or orzo

1 small onion, finely chopped

1–2 garlic cloves, minced

2 tablespoons fresh parsley

Sea salt and black pepper

1 large egg

1/2 cup all-purpose flour

6–8 cups chicken broth

3 large eggs

Juice of 2 lemons


Instructions

1. Combine meat, rice, onion, garlic, parsley, salt, pepper, and egg.

2. Shape into small meatballs and coat lightly in flour.

3. Place meatballs in a pot and cover with broth.

4. Simmer covered for 30–45 minutes.

5. Remove meatballs and set aside.

6. Whisk eggs and lemon juice.

7. Temper with hot broth.

8. Return mixture to pot and heat gently.

9. Add meatballs back and warm through.

Notes

Do not allow the soup to boil after adding the egg-lemon sauce.
