Description

  • Greek pasta salad combines fresh veggies, feta, and zesty dressing. Easy, healthy, and perfect for any season.

Ingredients

  • 1 tablespoon kosher salt (for boiling water)

  • 1 pound farfalle (bowtie pasta)

  • 1/4 cup extra-virgin olive oil

  • 3 tablespoons distilled white vinegar

  • 1/2 teaspoon dried oregano

  • 1/2 teaspoon garlic powder

  • 2 Persian cucumbers, sliced into half-moons

  • 1 cup cherry tomatoes, halved

  • 1/3 cup pitted and chopped black olives

  • 1/2 red onion, finely chopped

  • Freshly ground black pepper, to taste

  • 2 tablespoons fresh dill, chopped

  • 1/2 cup crumbled feta cheese


Instructions

  • Cook the Pasta: Bring a large pot of salted water to a boil. Add the farfalle and cook until al dente, following the package instructions. Drain and transfer to a large mixing or serving bowl.

  • Prepare the Dressing: In a small bowl, whisk together the olive oil, vinegar, oregano, and garlic powder until well combined.

  • Combine Ingredients: Add the cucumbers, cherry tomatoes, olives, and red onion to the bowl with the pasta. Pour the dressing over the salad and toss everything together until evenly coated.

  • Finish and Serve: Season with salt and black pepper to taste. Add the chopped dill and sprinkle the crumbled feta on top just before serving.
