Ingredients

  • 1 1/4 pounds fresh green beans, ends trimmed

  • 1/2 cup crumbled feta cheese

  • 1/4 cup sliced almonds, toasted

  • 3 tablespoons fresh lemon juice

  • 1 1/2 tablespoons olive oil

  • 1 tablespoon Dijon mustard

  • 1 teaspoon maple syrup or honey (optional)

  • Salt and black pepper to taste


Instructions

  • Prepare a large bowl filled with ice water and set aside.

  • Bring a large pot of water to a boil. Once boiling, add about 1 tablespoon of salt, then add the green beans. Cook for 3 to 5 minutes until they turn vibrant green and are just tender.

  • Immediately transfer the green beans to the ice water to stop the cooking. Once cooled, drain and pat them dry using a clean kitchen towel.

  • Place the cooled green beans in a large serving bowl. Add the crumbled feta and toasted almonds.

  • In a small bowl or jar, combine lemon juice, Dijon mustard, maple syrup or honey (if using), olive oil, salt, and pepper. Whisk or shake until well blended.

  • Pour some of the vinaigrette over the green bean mixture and toss to combine. Taste and adjust with additional vinaigrette, salt, or pepper as needed. Reserve any leftover vinaigrette for another salad.
