Ingredients
8 ounces thin flat rice noodles
3 cups cooked shredded chicken
4 cups green onions, chopped into 1/2-inch pieces
1/4 cup fresh ginger, roughly chopped
2 garlic cloves, roughly chopped
2 tablespoons rice vinegar
2 tablespoons water
2 tablespoons light soy sauce
1 teaspoon kosher salt
1/4 teaspoon ground white or black pepper
1/3 cup neutral cooking oil
Hot chili sauce, for serving (optional)
1/4 cup crispy fried onions, for garnish
Instructions
1. Cook the rice noodles according to the package directions. Drain and rinse under cold water to stop the cooking process. Set aside.
2. In a blender or food processor, add one quarter of the chopped green onions along with the ginger, garlic, rice vinegar, and water. Blend until the ginger and garlic become smooth.
3. Add the remaining green onions and soy sauce. Pulse until finely chopped but still slightly textured, similar to a thick sauce.
4. Transfer the mixture to a bowl. Stir in the oil, salt, and pepper. Let the sauce rest for about 10 minutes so the flavors blend.
5. Place the prepared noodles in a large bowl and toss with the green ginger sauce until evenly coated.
6. Add the shredded chicken and gently mix until combined. If the noodles seem too thick, add a small splash of water to loosen the sauce.
7. Serve immediately for a warm dish, or let the noodles sit for about 15 minutes if serving chilled.
8. Divide into bowls and top with crispy fried onions and chili sauce if desired.
Notes
Rinsing the noodles after cooking prevents them from sticking together.
Allowing the sauce to rest briefly helps the ginger and garlic flavors blend smoothly.
