Description
A high-protein grilled chicken Caesar salad made with juicy marinated chicken, crisp romaine, homemade sourdough croutons, and creamy Greek yogurt Caesar dressing.
Ingredients
1 to 1¼ pounds boneless, skinless chicken breasts
2 tablespoons fresh lemon juice
2 tablespoons olive oil
½ teaspoon garlic powder
½ teaspoon dried thyme
½ teaspoon dried oregano
¼ teaspoon salt
¼ teaspoon black pepper
1 head romaine lettuce, chopped
½ cup freshly shaved Parmesan cheese
2 cups sourdough bread cubes
1 tablespoon olive oil
¼ teaspoon garlic powder
Pinch of salt
½ cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 small garlic clove, minced
2 tablespoons grated Parmesan cheese
2 tablespoons olive oil
Salt and black pepper to taste
Instructions
1. Whisk together lemon juice, olive oil, garlic powder, thyme, oregano, salt, and pepper.
2. Marinate chicken for at least 1 hour.
3. Bake seasoned bread cubes at 375°F for 10–15 minutes until golden.
4. Blend dressing ingredients until smooth.
5. Grill chicken 5–6 minutes per side to 165°F.
6. Rest, slice, and assemble salad with romaine, chicken, croutons, Parmesan, and dressing.
Notes
Store components separately for meal prep.
Use freshly shaved Parmesan for best flavor.
Let chicken rest before slicing to retain juices.
