Ingredients

  • For the Dressing:

    • 1/3 cup mayonnaise

    • 2 tablespoons olive oil

    • 1 tablespoon fresh lemon juice

    • 2 tablespoons Cajun seasoning

    • 1 teaspoon sweet paprika

    • Salt, to taste

    • Black pepper, to taste

    For the Salad:

    • 12 ounces bowtie pasta

    • 1 tablespoon olive oil

    • 3 cups grilled boneless skinless chicken breast, sliced

    • 1 large red bell pepper, chopped

    • 1 large green bell pepper, chopped

    • 3 green onions, thinly sliced (plus extra for garnish)


Instructions

  • Prepare the Dressing:
    In a medium bowl, whisk together the mayonnaise, olive oil, lemon juice, Cajun seasoning, and paprika. Add salt and black pepper to taste. Set aside.

  • Cook the Pasta:
    In a large pot of boiling salted water, cook the bowtie pasta according to package directions. Drain and rinse under cold water until the pasta is cooled to room temperature.

  • Cook the Chicken:
    In a skillet over medium heat, warm the olive oil. Add the grilled chicken slices and cook until heated through, about 4 minutes. Remove from heat and let cool slightly. Slice into bite-sized pieces if not already done.

  • Assemble the Salad:
    In a large mixing bowl, combine the cooled pasta, chicken, red bell pepper, green bell pepper, and green onions. Pour the prepared dressing over the mixture and toss well to coat everything evenly.
