Description
A hearty baked casserole made with lean ground beef, tender diced potatoes, tomato sauce, and sharp cheddar cheese. Perfect for an easy family dinner.
Ingredients
2 tablespoons olive oil, divided
2 pounds Yukon Gold or Russet potatoes, cut into ¼-inch cubes (unpeeled)
1 ½ pounds lean ground beef
1 ½ teaspoons kosher salt, divided
1 medium yellow onion, finely chopped
1 garlic clove, minced
1 teaspoon mild chili powder
1 (15-ounce) can tomato sauce
1 tablespoon Worcestershire sauce (gluten-free if needed)
1 teaspoon yellow mustard
2 cups shredded sharp cheddar cheese
Instructions
1. Preheat your oven to 375°F.
2. Warm a large heavy-bottomed pot over medium-high heat. Add 1 tablespoon olive oil, ground beef, chopped onion, and 1 teaspoon salt. Cook 5–8 minutes until browned. Transfer to a plate.
3. In the same pot, add remaining olive oil, diced potatoes, and remaining ½ teaspoon salt. Cover and cook about 10 minutes, stirring often, until just tender.
4. Return beef mixture to pot. Stir in garlic and chili powder and cook 1 minute.
5. Remove from heat. Mix in tomato sauce, Worcestershire sauce, mustard, and 1 cup cheese.
6. Spread mixture in a greased 9×13-inch baking dish. Top with remaining cheese.
7. Cover with foil and bake 15 minutes. Remove foil and bake 5–10 minutes until cheese is melted and lightly golden.
8. Let rest a few minutes before serving.
Notes
Do not overcook the potatoes before baking.
Let casserole rest before slicing for best texture.
Store leftovers refrigerated up to 4 days.
