Description

Ingredients

  • 1/2 pound ground beef

  • 1 teaspoon taco seasoning

  • 1 teaspoon salt

  • 1 cup canned black beans, drained and rinsed

  • 1 1/2 cups cooked white rice

  • 1/4 cup corn kernels (cooked or thawed if frozen)

  • 1/4 cup shredded cheese

  • 1/4 cup red onion, chopped

  • 1/4 cup cherry tomatoes, halved

  • 1 cup chopped lettuce

  • 2 tablespoons sour cream

  • Fresh cilantro, chopped

  • 1/2 avocado, diced (optional)


Instructions

  • In a skillet over medium-high heat, cook the ground beef with taco seasoning and salt. Stir occasionally and cook until the meat is browned and fully cooked, about 6–8 minutes.

  • In each serving bowl, add a layer of cooked white rice as the base.

  • Top with the seasoned beef, black beans, corn, cherry tomatoes, shredded cheese, red onion, and lettuce.

  • Add a spoonful of sour cream and a sprinkle of chopped cilantro.
