Ingredients

1/2 pound ground beef

1 teaspoon taco seasoning

1 teaspoon salt

1 cup canned black beans, drained and rinsed

1 1/2 cups cooked white rice

1/4 cup corn kernels (cooked or thawed if frozen)

1/4 cup shredded cheese

1/4 cup red onion, chopped

1/4 cup cherry tomatoes, halved

1 cup chopped lettuce

2 tablespoons sour cream

Fresh cilantro, chopped

1/2 avocado, diced (optional)
Instructions

In a skillet over medium-high heat, cook the ground beef with taco seasoning and salt. Stir occasionally and cook until the meat is browned and fully cooked, about 6–8 minutes.

In each serving bowl, add a layer of cooked white rice as the base.

Top with the seasoned beef, black beans, corn, cherry tomatoes, shredded cheese, red onion, and lettuce.

Add a spoonful of sour cream and a sprinkle of chopped cilantro.
