  • 6 tablespoons butter

  • 1 medium onion, diced

  • 3 cloves garlic, minced

  • 3 stalks celery, diced

  • 2 medium carrots, diced

  • ⅓ cup all-purpose flour

  • 4 cups low-sodium chicken broth

  • 4 cups peeled and diced potatoes (about 4 medium potatoes)

  • 1 teaspoon dried thyme

  • Salt and black pepper, to taste

  • 1 vegetable bouillon cube

  • 1 cup heavy cream or half-and-half

  • Fresh parsley, chopped (optional, for garnish)


Instructions

  • In a large pot, melt butter over medium heat. Add diced onion, garlic, celery, and carrots. Cook for 5 to 7 minutes until the vegetables are soft and the onion is translucent.

  • Stir in the flour and cook for 1 to 2 minutes, stirring constantly, to cook off the raw flour taste.

  • Slowly pour in the chicken broth while stirring to avoid lumps. Add the diced potatoes, thyme, bouillon cube, salt, and pepper. Bring to a gentle boil.

  • Lower the heat, cover, and let the soup simmer for 15 to 20 minutes until potatoes are tender.

  • Stir in the cream or half-and-half and warm the soup through without boiling.

  • Taste and adjust seasoning. Serve hot with a sprinkle of fresh parsley if desired.
