1 vegetable bouillon cube

1 cup heavy cream or half-and-half

Instructions

In a large pot, melt butter over medium heat. Add diced onion, garlic, celery, and carrots. Cook for 5 to 7 minutes until the vegetables are soft and the onion is translucent.

Stir in the flour and cook for 1 to 2 minutes, stirring constantly, to cook off the raw flour taste.

Slowly pour in the chicken broth while stirring to avoid lumps. Add the diced potatoes, thyme, bouillon cube, salt, and pepper. Bring to a gentle boil.
