Description

A creamy, homemade skillet dinner made with lean ground beef, pasta, and real cheese. Easy, comforting, and perfect for busy nights.


Ingredients

1 tablespoon olive oil

1 medium yellow onion, chopped

2 garlic cloves, minced

1 pound lean ground beef

1/2 teaspoon ground black pepper

1/2 teaspoon fine sea salt

1 teaspoon paprika

1 teaspoon dried oregano

1/2 teaspoon chili powder

2 heaping tablespoons tomato paste

2 cups low-sodium chicken broth

2 cups whole milk or unsweetened dairy-free milk

8 ounces dry macaroni noodles or small pasta shells

2 cups shredded mild cheddar cheese

Fresh parsley, chopped (optional)


Instructions

1. Heat olive oil in a large skillet over medium heat. Add onion and garlic and sauté until softened.

2. Add ground beef, salt, and pepper. Cook until browned, breaking it apart as it cooks.

3. Stir in spices and tomato paste. Add broth, milk, and dry pasta, stirring to combine.

4. Bring to a gentle boil, reduce heat, and simmer until pasta is tender and liquid is mostly absorbed.

5. Remove from heat and stir in cheese until melted. Rest briefly before serving.

6. Garnish with parsley and serve warm.

Notes

Stir frequently while simmering to prevent sticking. Add a splash of milk when reheating leftovers.
