Description
Healthy chicken parmesan made in a skillet with marinara sauce and melted mozzarella. A quick, high-protein Italian-inspired dinner perfect for busy weeknights.
Ingredients
1 tablespoon olive oil or avocado oil
2 tablespoons all-purpose flour or gluten-free flour
1/4 teaspoon garlic powder
1/4 teaspoon fine salt
Pinch of black pepper
1 pound boneless, skinless chicken breasts, cut into 4 pieces and pounded to about 1/2 inch thick
Cooking spray
24 ounces tomato basil marinara sauce
1/2 cup shredded mozzarella cheese
1/4 cup grated Parmesan cheese
Fresh basil, thinly sliced (for garnish)
Optional for serving: roasted spaghetti squash, cooked pasta, or zucchini noodles
Instructions
1. Heat a large skillet over medium-high heat. Add the olive oil and swirl to coat the surface of the pan.
2. In a shallow bowl, mix the flour, garlic powder, salt, and black pepper.
3. Lightly coat each chicken piece in the flour mixture until evenly covered.
4. Place the chicken in the hot skillet and lightly mist the tops with cooking spray. Cook for about 4 minutes per side until lightly golden and nearly cooked through.
5. Pour the marinara sauce around the chicken in the pan. Lift the chicken pieces slightly so some sauce flows underneath.
6. Sprinkle mozzarella and Parmesan cheese evenly over the chicken.
7. Reduce the heat to medium and cover the skillet with a lid. Cook for about 5 minutes, until the sauce is hot, the cheese is melted, and the chicken is fully cooked.
8. Remove from heat and top with sliced fresh basil. Serve over spaghetti squash, pasta, or zucchini noodles if desired.
Notes
Store leftovers in a sealed container in the refrigerator for up to 3 days.
