Description
A creamy, protein-rich pasta made with lean ground turkey, sun-dried tomatoes, spinach, and Parmesan. Perfect for an easy weeknight dinner.
Ingredients
1 pound ground turkey
1 shallot, finely chopped
2 garlic cloves, minced
½ cup sun-dried tomatoes, chopped
2 cups pasta of choice
Salt and black pepper to taste
1 teaspoon dried oregano
½ teaspoon red pepper flakes
1 handful fresh spinach, chopped
1 cup chicken stock
1 tablespoon plain Greek yogurt
½ cup grated Parmesan cheese
¼ cup reserved pasta water
½ tablespoon butter
Instructions
1. Bring a large pot of salted water to a boil and cook pasta. Reserve pasta water.
2. Season and brown the turkey in a skillet, then remove.
3. Sauté butter, garlic, and shallot until fragrant.
4. Add sun-dried tomatoes and cook briefly.
5. Stir in chicken stock and Greek yogurt and simmer.
6. Return turkey, pasta, pasta water, Parmesan, and spinach.
7. Cook until creamy and serve.
Notes
Use whole wheat or legume pasta for added fiber. Reheat gently with extra stock if needed.
