Description

A lighter take on classic shepherd’s pie made with lean turkey, vegetables, and a creamy sweet potato topping.


Ingredients

pounds sweet potatoes, peeled and chopped

1 tablespoon olive oil

pounds lean ground turkey

½ medium white onion, finely diced

2 garlic cloves, minced

1 tablespoon tomato paste

1 tablespoon Worcestershire-style sauce

½ cup low-sodium vegetable or poultry stock, divided

10 ounces frozen mixed vegetables

Salt, to taste

Ground black pepper, to taste

1 teaspoon Italian-style seasoning

Fresh rosemary or thyme, optional


Instructions

1. Steam sweet potatoes until tender.

2. Blend with stock, olive oil, salt, and pepper until smooth.

3. Preheat oven to 375°F.

4. Cook ground turkey with salt and pepper.

5. Add onion and garlic; cook until fragrant.

6. Stir in tomato paste, stock, Worcestershire sauce, seasoning, salt, and pepper.

7. Fold in vegetables and cook briefly.

8. Spread sweet potato topping evenly.

9. Bake 20–25 minutes until bubbling.

10. Rest 10 minutes before serving.

Notes
