Rich, buttery herb chicken served with a Tuscan white bean pasta makes this herb butter chicken meal prep a satisfying and nutritious lunch option for your week.
Ingredients
For the Herb Butter Chicken:
4 boneless, skinless chicken thighs (or substitute with chicken breasts)
2 tablespoons butter
1 tablespoon olive oil
2 cloves garlic, minced
1 teaspoon dried Italian seasoning
1/2 teaspoon onion powder
Salt and pepper to taste
Fresh parsley, chopped (optional, for garnish)
For the Tuscan White Bean Pasta:
8 ounces pasta (your choice of regular, whole grain, or high-fiber)
1 tablespoon olive oil
2 cloves garlic, minced
1 pint cherry tomatoes, halved
3 cups fresh spinach
1 (15 oz) can white beans (like cannellini or navy), drained and rinsed
Salt and pepper to taste
Crushed red pepper flakes (optional)
Instructions
1. Bring a large pot of salted water to a boil. Add the pasta and cook according to the package instructions until al dente. Drain and set aside.
2. In a large skillet, heat 1 tablespoon olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.
3. Stir in cherry tomatoes and cook until they begin to soften.
4. Add spinach and cook until wilted.
5. Mix in the white beans and cooked pasta. Season with salt, pepper, and optional red pepper flakes. Toss everything to combine. Remove from heat.
6. Season both sides of the chicken thighs with Italian seasoning, onion powder, salt, and pepper.
7. Heat olive oil and butter in a large skillet over medium heat.
8. Add chicken and cook for about 5–7 minutes on each side or until cooked through and golden brown.
9. Add minced garlic during the last minute of cooking. Spoon butter over chicken as it finishes cooking.
10. Let the chicken rest for a few minutes before slicing if desired.
11. Divide the Tuscan White Bean Pasta evenly into four meal prep containers.
12. Add one piece of Herb Butter Chicken to each container.
13. Optional: Add a lemon wedge or garnish with chopped parsley for extra flavor.
