Ingredients

For the Salad:

1 lb boneless, skinless chicken tenders

6–8 cups chopped romaine or green leaf lettuce

4 hard-boiled eggs, peeled and sliced

¾ cup cherry tomatoes, halved

1–2 avocados, diced

¼–½ cup crumbled feta cheese

Optional: Cooked turkey bacon or chickpeas for added protein

Prepare the Dressing/Marinade:
In a medium bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, and salt until fully combined. Add black pepper to taste. Set aside. -
Marinate the Chicken:
Place the chicken tenders in a resealable bag or bowl. Pour in ¼ cup of the dressing and toss to coat. Marinate for at least 30 minutes, up to 2 hours for deeper flavor. -
Cook the Chicken:
Preheat your oven to 400°F. Lightly grease a baking dish. Transfer the marinated chicken to the dish and season with additional salt, pepper, and paprika if desired. Bake for 15–20 minutes or until the chicken reaches 165°F internally. Let the chicken cool before chopping into bite-sized pieces. -
Assemble the Salad:
In a large serving bowl, combine lettuce, cooked chicken, hard-boiled eggs, tomatoes, avocado, and any additional toppings like turkey bacon or chickpeas. Drizzle with the remaining dressing and gently toss to coat. -
Serve:
Sprinkle crumbled feta on top just before serving.
