    • 1 lb boneless, skinless chicken tenders

    • 68 cups chopped romaine or green leaf lettuce

    • 4 hard-boiled eggs, peeled and sliced

    • ¾ cup cherry tomatoes, halved

    • 12 avocados, diced

    • ¼½ cup crumbled feta cheese

    • Optional: Cooked turkey bacon or chickpeas for added protein


Instructions

  • Prepare the Dressing/Marinade:
    In a medium bowl, whisk together olive oil, honey, Dijon mustard, apple cider vinegar, and salt until fully combined. Add black pepper to taste. Set aside.

  • Marinate the Chicken:
    Place the chicken tenders in a resealable bag or bowl. Pour in ¼ cup of the dressing and toss to coat. Marinate for at least 30 minutes, up to 2 hours for deeper flavor.
