Description
Crispy pan-seared white fish topped with a nutty browned butter and fresh lemon sauce. Ready in just 15 minutes for an easy, elegant seafood dinner.
Ingredients
4 tablespoons unsalted butter, cut into pieces
1 tablespoon freshly squeezed lemon juice
Salt, to taste
Freshly ground black pepper, to taste
2 thin white fish fillets (4–5 ounces each), skinless and boneless
2 tablespoons all-purpose flour
2 tablespoons vegetable oil
Lemon wedges, for serving
Finely chopped fresh parsley (optional)
Instructions
1. Place the butter in a light-colored small saucepan over medium heat. Melt and cook until golden brown and nutty, about 3 minutes. Remove immediately and pour into a bowl.
2. Stir in lemon juice, salt, and pepper. Let cool slightly and adjust seasoning. Set aside.
3. Pat fish fillets dry. Season with salt and pepper. Lightly coat with flour and shake off excess.
4. Heat oil in a nonstick skillet over high heat until shimmering. Cook fish 1½ minutes on first side until golden.
5. Flip and cook another 1½ minutes or until opaque and cooked through.
6. Transfer to plates. Spoon about 1 tablespoon sauce over each fillet, avoiding dark solids. Garnish with parsley and lemon wedges.
Notes
Use a light-colored pan to monitor butter browning.
Avoid scraping dark solids into the sauce when serving.
Best served immediately while fish remains crisp.
