A quick and flavorful Korean-inspired rice bowl featuring savory ground beef, sesame, and crisp vegetables.
Ingredients
1 pound ground beef
1/3 cup coconut aminos
1 tablespoon toasted sesame oil
2 teaspoons honey
2 tablespoons rice vinegar
3 garlic cloves, minced
1/4 to 1/2 teaspoon crushed red pepper flakes
1/4 teaspoon ground ginger or 1 teaspoon fresh grated ginger
3 green onions, sliced
3 cups cooked white or brown rice
1 teaspoon sesame seeds
1 large cucumber, thinly sliced
8 radishes, thinly sliced
2 medium carrots, shredded
Optional chili sauce for serving
Instructions
1. Heat a large skillet over medium-high heat and cook the ground beef while breaking it into small pieces until browned. Drain excess liquid.
2. Whisk coconut aminos, honey, sesame oil, rice vinegar, garlic, red pepper flakes, and ginger in a bowl.
3. Add the sauce and the white parts of the green onions to the beef and cook for 1–2 minutes until the sauce lightly coats the meat.
4. Remove from heat.
5. Divide cooked rice among bowls and top with the beef mixture.
6. Add cucumber, radishes, carrots, sesame seeds, and green onion tops. Serve with chili sauce if desired.
Notes
Adjust the crushed red pepper flakes depending on your spice preference.
Brown rice can be used for extra fiber and a nuttier flavor.
Store leftover beef mixture in the refrigerator for up to 3 days.
