Description

Lamb Shawarma Chickpea Soup is a bold Middle Eastern-inspired one-pot meal made with ground lamb, chickpeas, warm shawarma spices, and fresh spinach. Ready in just 30 minutes, this hearty and nourishing soup delivers deep flavor with minimal effort.


Ingredients

Spice Blend:

2 teaspoons ground cumin

2 teaspoons ground coriander

2 teaspoons paprika

1 teaspoon ground cardamom (optional)

1/4 teaspoon ground cinnamon

1/2 teaspoon cayenne pepper

1/2 teaspoon black pepper

1 teaspoon salt

Soup:

2 tablespoons olive oil

2 garlic cloves, minced

1 medium onion, finely chopped

1 pound ground lamb or ground beef

2 tablespoons tomato paste

2 medium carrots, peeled and diced

1 (21-ounce) can chickpeas, drained and rinsed

1 (14-ounce) can crushed tomatoes

3 cups chicken broth

4 packed cups fresh spinach, roughly chopped

Garnish:

Plain yogurt or sour cream

Fresh chopped cilantro


Instructions

1. Heat olive oil in a large pot over medium-high heat. Add garlic and onion and sauté until softened and fragrant.

2. Add ground lamb and cook, breaking it apart, until browned and no longer pink.

3. Stir in the spice blend and cook for 1 minute. Add tomato paste and cook another minute.

4. Add carrots, chickpeas, crushed tomatoes, and chicken broth. Bring to a gentle boil.

5. Reduce heat, cover, and simmer for about 10 minutes until carrots are tender.

6. Stir in chopped spinach and cook until wilted. Adjust seasoning as needed.

7. Serve hot topped with yogurt and fresh cilantro.

Notes

Adjust cayenne to control heat level.

Add water or broth for a thinner consistency.

Store in the refrigerator up to 4 days or freeze up to 3 months.
