Description
A quick skillet dinner with tender chicken, fresh lemon, garlic, and crisp green beans.
Ingredients
1 ½ pounds boneless, skinless chicken thighs or breasts
Zest of 1 large lemon
Juice of 1 to 1 ½ large lemons
3 tablespoons olive oil, divided
2 cloves garlic, minced
¼ teaspoon paprika
1 teaspoon baking soda
1 teaspoon salt, divided
1 teaspoon black pepper, divided
1 pound fresh green beans, trimmed
2 tablespoons butter, divided
⅓ cup water
Instructions
1. Cut chicken into strips and marinate with lemon zest, oil, garlic, paprika, baking soda, salt, and pepper. Chill 15 minutes.
2. Blanch green beans until tender-crisp, then cool in ice water and drain.
3. Heat skillet with oil and butter over medium-high heat.
4. Cook chicken undisturbed 2 minutes, then stir and cook until done.
5. Deglaze with water, add green beans, salt, and pepper, and cook briefly.
6. Remove from heat and stir in butter and lemon juice.
Notes
Adjust lemon juice to taste. Thighs offer extra juiciness, while breasts stay lean.
