Description

Lemon Garlic Herb Rice is a bright and flavorful side dish made with fresh herbs, garlic, butter, and lemon. Ready in just 25 minutes, it pairs perfectly with grilled meats, seafood, or fresh salads.


Ingredients

2 cups long-grain white rice

4 cups water

4 cloves garlic, finely chopped

1/4 cup unsalted butter

1/2 teaspoon kosher salt, plus more to taste

1/4 teaspoon freshly ground black pepper, plus more to taste

1/4 cup chopped fresh parsley

1/4 cup chopped fresh mixed herbs (such as basil, rosemary, thyme, or oregano)

Zest and juice of 1 large lemon (or 2 small lemons)


Instructions

1. In a large saucepan, combine the rice, water, and chopped garlic. Bring to a boil over medium-high heat.

2. Cover and reduce heat to low. Simmer for about 20 minutes, or until rice is tender and liquid is absorbed.

3. Remove from heat and let sit, covered, for 5 minutes.

4. Fluff with a fork. Stir in butter, lemon juice, salt, and black pepper.

5. Fold in chopped parsley and mixed herbs.

6. Transfer to a serving bowl, sprinkle with lemon zest, and adjust seasoning if needed.

Notes

For extra brightness, add additional lemon zest before serving.

You can substitute part of the butter with olive oil for a lighter flavor.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
