Ingredients

4 boneless, skin-on chicken thighs (68 ounces each)

2 teaspoons dried Italian seasoning

1 teaspoon sea salt

1 teaspoon red pepper flakes (optional)

1/2 teaspoon ground black pepper

1/2 teaspoon garlic powder

1 tablespoon olive oil or avocado oil

1 medium lemon, thinly sliced

34 tablespoons fresh herbs (thyme, rosemary, or sage), stems removed


Instructions

1. Preheat oven to 375°F and place a 10-inch oven-safe skillet on the stovetop.

2. Mix Italian seasoning, sea salt, red pepper flakes, black pepper, and garlic powder in a small bowl.

3. Pat chicken thighs dry and coat evenly with seasoning blend.

4. Heat skillet over medium to medium-high heat and add oil.

5. Place chicken skin-side down and sear 3–4 minutes per side until golden brown.

6. Remove from heat and arrange lemon slices over and around chicken.

7. Sprinkle fresh herbs over the top.

8. Transfer skillet to oven and roast 10–15 minutes until internal temperature reaches about 170°F.

9. Let rest 5 minutes before serving. Spoon lemon pan juices over chicken.

Notes

Use evenly sized chicken thighs for consistent cooking.

Allow chicken to rest before serving to retain juices.

Bone-in thighs may require additional roasting time.
