Description

Lightened-Up Beef and Broccoli made with lean flank steak, crisp broccoli, and a savory lighter sauce.


Ingredients

2 pounds lean flank steak, sliced thin

2 teaspoons olive oil

24 ounces fresh broccoli florets

5 tablespoons cornstarch, divided

1 cup low-sodium soy sauce

5 garlic cloves, minced

2 tablespoons brown sugar

1 tablespoon fresh minced ginger

1 teaspoon chili paste


Instructions

1. Toss steak with 3 tablespoons cornstarch.

2. Cook beef in olive oil until browned and cooked through.

3. Whisk remaining cornstarch with sauce ingredients.

4. Sauté broccoli until tender-crisp.

5. Return beef to pan, add sauce, and cook until thickened.

Notes

Slice beef against the grain for best texture. Serve with rice, quinoa, or cauliflower rice.
