Ingredients
1 1/2 pounds boneless, skinless chicken breasts, cut into bite-sized chunks
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup shredded mozzarella cheese
1 box chicken-flavored stuffing mix
1 can (14.5 oz) diced tomatoes, undrained
1/2 cup water
2 teaspoons minced garlic
1 teaspoon dried basil
Instructions
1. Preheat your oven to 400°F.
2. Lightly grease a 9×13-inch baking dish. Spread the chicken pieces evenly across the bottom of the dish and season with salt and pepper.
3. Sprinkle the shredded mozzarella cheese over the chicken.
4. In a separate mixing bowl, combine the stuffing mix, undrained diced tomatoes, water, minced garlic, and dried basil. Stir well to combine.
5. Spread the stuffing mixture evenly over the chicken and cheese.
6. If preparing ahead, cover the dish tightly, label, and freeze.
7. When ready to cook from frozen, thaw in the refrigerator overnight.
8. Bake uncovered at 400°F for 30 minutes, or until the chicken is fully cooked and the casserole is hot throughout.
Notes
To customize, try adding chopped spinach or a sprinkle of Parmesan. Make sure to thaw fully before baking for best results.
