These Make-Ahead Teriyaki Chicken Rice Boxes are the ultimate freezer-friendly meal prep solution. With bold homemade sauce, juicy chicken, and nutrient-packed vegetables over rice, each bowl is satisfying, balanced, and ready in minutes.


Ingredients

For the Teriyaki Sauce:

3 cloves garlic, minced

1 1/2 tablespoons fresh ginger, finely grated

1/4 cup brown sugar

1/2 cup soy sauce

1/2 tablespoon dry mustard

1/4 teaspoon white pepper

6 ounces pineapple juice

1/3 cup freshly squeezed orange juice

1/2 tablespoon cornstarch

1 tablespoon water

For the Bowls:

2 pounds boneless, skinless chicken breasts, diced

Salt and pepper to taste

3 cups frozen stir-fry vegetables (cut into bite-sized pieces if needed)

4 cups cooked white or brown rice


Instructions

1. In a bowl, whisk together all the teriyaki sauce ingredients. Set aside.

2. Season the diced chicken with salt and pepper. Cook in a large skillet over medium-high heat.

3. Pour half of the teriyaki sauce into the skillet with the chicken. Cook until the chicken is fully cooked and the sauce has thickened.

4. Remove from heat and let the chicken cool.

5. To assemble each rice bowl, layer 1 cup of cooked rice in the bottom of a freezer-safe container.

6. Add about 3/4 cup of frozen stir-fry vegetables on top of the rice.

7. Divide the cooled chicken evenly among the bowls.

8. Drizzle the remaining teriyaki sauce evenly over the bowls.

9. Seal with lids and freeze.

10. To reheat: Microwave for about 5 minutes from frozen, or until heated through. Adjust time based on your container type and microwave power.

Notes

You can use chicken thighs instead of breasts for a juicier option.

Use brown rice for added fiber and a nuttier flavor.

Add sliced scallions or sesame seeds after reheating for freshness.
