This Make-Ahead Turkey Chili Mac and Cheese is a cozy, one-pot dinner packed with protein, fiber, and bold flavor — perfect for family meals and weekly prep.
Ingredients
1 pound ground turkey
1 medium onion, finely diced
2 tablespoons chili powder
1½ teaspoons salt
1 teaspoon minced garlic
1 can (19 oz) kidney beans, rinsed and drained
1¾ cups tomato sauce
3½ cups low-sodium vegetable broth
3 cups whole grain elbow macaroni (dry)
½ cup milk
2 cups shredded cheddar cheese
Instructions
1. In a large skillet or pot, cook the ground turkey over medium-high heat until browned. If the turkey is very lean, lightly coat the pan with oil before adding the meat.
2. Add the diced onion, chili powder, salt, and garlic. Cook for 4–5 minutes, stirring occasionally, until the onion is soft.
3. Mix in the kidney beans, tomato sauce, and broth. Bring the mixture to a simmer.
4. Stir in the dry macaroni. Let it return to a simmer, then cover the pot and reduce the heat to medium-low. Cook for 10–15 minutes, stirring frequently, until the pasta is tender.
5. Pour in the milk and stir in the cheddar cheese until melted and creamy. Optionally, sprinkle extra cheese on top before serving.
Notes
For best reheating results, add a splash of milk or broth to loosen the texture. Store in an airtight container for up to 5 days in the fridge.
