Description

  • Mango Chickpea Kachumber Salad is crisp, colorful, and protein-rich. A refreshing, no-cook recipe for vibrant meals.

Ingredients

  • 15 oz canned chickpeas, rinsed and drained

  • 1 cup red onion, finely chopped

  • 1 cup carrots, diced

  • 1½ cups cucumber, chopped

  • 1½ cups tomatoes, chopped

  • 1 large mango, peeled and diced

  • ½ cup fresh cilantro, chopped

  • 2 green chilies, finely chopped (adjust to taste)

  • 23 teaspoons chaat masala

  • 24 tablespoons fresh lime juice

  • ½ teaspoon salt (adjust to taste)


Instructions

  • In a large mixing bowl, combine the drained chickpeas with chopped cucumber, red onion, carrots, and tomatoes.

  • Add the diced mango and chopped cilantro.

  • Sprinkle in the green chilies, chaat masala, lime juice, and salt.

  • Toss everything together until evenly mixed and well coated with the seasonings.

  • Taste and adjust lime juice or salt as needed. Serve chilled or at room temperature.
